Food notes, built from sweet materials

Gourmand comes from the French word for someone who loves to eat. In perfume it describes compositions whose notes recall food: vanilla, caramel, praline, cocoa, coffee, nuts, honey, milk or cake. Part of the sweetness comes from natural materials such as vanilla, tonka bean, benzoin and cocoa absolute. Part comes from aroma molecules such as ethyl maltol, which adds a cooked-sugar warmth. Gourmand is rarely a family on its own. It usually joins woody, ambery, floral or fruity ones, which is why it turns up in so many pyramids.

What keeps sweetness in balance

Sweet notes are dense and go flat when nothing pulls against them. Perfumers counter them with dryness from wood, vetiver or coffee, with heat from pepper, cardamom or cinnamon, with resins such as benzoin and labdanum, or with lift from citrus, flowers and fruit. That counterweight decides which kind of gourmand you get, and it is the part of a pyramid worth reading closely.

  • Boozy: Sospiro Il Padrino opens with dark rum and amaretto, then patchouli blossom, dry amber and sandalwood, over labdanum, vanilla wood and Siam benzoin. Sospiro files it as oriental.
  • Fruity: Fragrance Du Bois Sirène from the same house pairs cherry and pink pepper with oud and incense. Its family is fruity gourmand.
  • Floral: Nishane Hundred Silent Ways combines tuberose, white jasmine and gardenia with vanilla, sandalwood and vetiver. Nishane lists floral, gourmand and musky.
  • Light and sweet: Fascent Corn Star puts popcorn and musky marshmallow in the heart, between love pear and coconut water and tonka bean. Fascent calls it sweet and light.

Choosing a gourmand without choosing a dessert

Start from the counterweight, not from the food name. If you like dry perfumes, look for coffee, wood and vetiver around the sweetness. If you prefer light ones, pick the fruity or floral builds. A sweet note in the top, such as popcorn or cherry, is playful, whereas the same note in the base gives a steady, comforting finish. The brand's family words are a shortcut. Dense gourmands suit cool weather and evenings, and the lighter ones travel further into spring.

Is a gourmand perfume always as sweet as a dessert?

No. Fragrance Du Bois Minuit et Demi balances caramel and coffee with cardamom, pimento, vetiver and cedarwood. Sweetness is shaped by what stands against it, so dry woods and spice keep a gourmand grown-up.

How is a gourmand different from an ambery perfume?

Ambery perfumes are built on warm resins and vanilla. Gourmands add notes you could eat, such as caramel, nuts, cocoa or cake. The two overlap, and Pernoire Poka is called both gourmand and ambery by its house.

When should I wear a gourmand perfume?

Dense, resinous gourmands suit cool weather and evenings. Lighter ones with fruit, flowers or coconut, such as Fascent Corn Star or Fragrance Du Bois Sirène, are easier on mild days. One or two sprays are usually enough.
